For the Macaroons:

  • 4 large egg whites at room temperature
  • ½ cup granulated sugar
  • Pinch of salt (about 1/8 teaspoon)

  • 1 to 1 ½ teaspoons rum extract
  • 1 8-ounce container candied pineapple wedges
