These Fruit Cake Coconut Macaroons are a chewy, easy-to-make twist on classic holiday fruitcake. They combine a sweet, moist coconut macaroon base with the traditional flavors of candied red and green cherries, pineapple, citrus peel, and pecans, resulting in a festive, light, and delicious cookie.

Ingredients:

• 1 (14-ounce) bag sweetened shredded coconut
• 1 (14-ounce) can sweetened condensed milk
• 2 teaspoons vanilla extract
• ½ teaspoon almond extract
• ½ cup Paradise candied red cherries, chopped
• ½ cup Paradise candied green cherries, chopped
• ½ cup Paradise candied pineapple, chopped
• ¼ cup Paradise candied citrus peel, chopped
• ½ cup pecans chopped
