Paradise and Pennant Candied Fruit

Pineapple sugar cookie bars

Great for a backyard gathering or casual gathering, this modern version of a classic will be a hit with any crowd.

Ingredients:

• 1/4 cup of unsalted butter, room temperature
• 2-ounces (1/4 cup) cream cheese, room temperature
• 1 cup white granulated sugar
• 1 egg, room temperature
• 1 teaspoon vanilla extract
• 1 tablespoon pineapple juice
• 1/4 teaspoon salt
• 2-1/4 cups all-purpose flour
• 1/2 teaspoon baking powder
• 1 teaspoon cornstarch
• 1/2 cup finely diced candied pineapple

Pineapple vanilla icing:

• 2 tablespoons butter, melted
• 3 cups powdered sugar
• 1-1/2 tablespoons pineapple juice
• 1 tablespoon crushed pineapple
• 1 teaspoon vanilla extract
• 1 tablespoon corn syrup

Directions:

Preheat oven to 350-degrees.
