Ingredients:

  • ½ cup butter
  • 2 cups all-purpose flour
  • ½ cup sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup heavy cream
  • 2 teaspoon vanilla extract
  • 1 large egg
  • 8 oz tropical fruit mix (dried blend from Paradise Fruit)
  • ½ cup shredded sweetened coconut

Icing for Scones

  • ½-1 cup confectioners sugar
  • 1 tablespoon milk or heavy cream
  • 1 teaspoon vanilla extract
