This small cookie packs a big lemony punch! Our special recipe uses both lemon juice and candied lemon peel for a true lemon taste, and we’ve added white chocolate chips for a touch of sweetness.Unassuming in looks but sophisticated in taste, these treats will disappear fast so you might want to make a double batch.
Preheat oven to 350 F
Combine flour, baking soda and salt in bowl. Beat butter, brown sugar, and granulated sugar in a large mixing bowl until creamy. Beat in egg and lemon juice, gradually add flour mixture, add white chocolate chips and lemon peel. Drop by rounded tablespoon onto ungreased baking sheet. Bake for 10-12 minutes or until edges are lightly browned. Cool on baking sheet.
Yields approximately 36 cookies.
