Candied Pineapples Macadamia Nut Bars

Our grown-up version of the classic layered cookie starts with a base of refrigerated cookie dough that is topped with sweetened condensed milk, candied pineapple, chocolate chips, and macadamia nuts. Quick to make and abundant in flavor, this is a great go-to treat to serve when unexpected guests arrive on your doorstep. It is also a perfect any-time indulgence or weeknight dessert.

  • 1-8oz. cup candied pineapple
  • 1-can sweetened condensed milk
  • 1-1/2 cups semisweet chocolate pieces
  • 1-cup flaked coconut
  • 1 1/2-cups macadamia nuts (coarsely chopped)
  • 1-18oz. package refrigerated sugar cookie dough

Preheat oven to 350° F. Lightly spray a 15×10″ baking pan with nonstick spray.

Press cookie dough onto bottom of pan, top evenly with the sweetened condensed milk, candied pineapple, chocolate pieces, coconut and macadamia nuts, press firmly into cookie dough. Bake 18-25 minutes or until lightly brown. Cool in pan, cut into bars. Yield approximately 48 bars.
