Chewy Ginger Spice Cookies with Ras El Hanuot

Ras el hanout is a perfectly-balanced collection of more than a dozen exotics spices like cardamom, cinnamon, paprika and more. It’s absolutely amazing when added to Middle Eastern dishes like lamb, and adds a powerful blast of savory flavor to cookies. Combining candied ginger really seals the deal.



  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons ras el hanout
  • 1 1/2 teaspoons ground ginger
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, at room temperature
  • 1/2 cup light brown sugar, packed
  • 1/3 cup granulated sugar
  • 1 large egg
  • 1/4 cup unsulfured molasses
  • 1/2 cup finely diced candied ginger, plus more cut into thin strips, for garnish
  • 1/2 cup raw or demerara sugar


Preheat oven to 350 degrees.
