Easy Lemon Curd Parfaits

This layered dessert has it all, crunch and soft, tart and sweet, and is packed with lemony goodness. Easy to make, beautiful and delicious, these parfaits make a lovely summer dessert or a great addition to a buffet or celebration.

Ingredients:    

• 1 Cup Fresh lemon juice
• zest of one medium lemon
• 1 Cup castor sugar
• 1/2 Cup melted butter
• 2 large eggs
• 2 Tbsp. softened butter

Cream Cheese “Fluff”

• 4 oz. Cream cheese, cold, cut into 1 inch cubes
• 1 Cup heavy cream, very cold
• 1 1/2 Tbsp. Non-fat dry milk powder
• 1/2 Cup Confectioners’ sugar
• 1/2 tsp. vanilla bean paste or 1/2 tsp. vanilla is fine also
• Paradise Candied Lemon Peel
