Paradise and Pennant Candied Fruit

Fruit cake Cookies

These soft, chewy cookies are filled with candied fruit and are loved by even those who aren’t fond of traditional fruitcake. Easy to make, great to share, they can be enjoyed any time of year and are always a crowd pleaser.



  • 1 stick unsalted butter room temperature
  • 1/2 cup brown sugar 70g / 2.5oz
  • 1 large whole egg room temperature
  • 1/2 tsp vanilla extract
  • 1 cup all purpose flour 155g / 5.5oz
  • 1/4 tsp salt
  • 1/2 tsp baking soda
  • 1 cup Paradise’s Fruitcake mix



Preheat your oven to 350F.
