Paradise and Pennant Candied Fruit

German Christmas Stollen

A traditional recipe for a German classic.

Ingredients:

  • 8 1/2 to 9 cups all-purpose flour
  • 1 cup plus 2 tablespoons sugar, divided
  • 2 1/4 oz each packages active dry yeast
  • 2 teaspoons salt
  • 2 cups milk
  • 1 3/4 cup butter, softened and divided
  • 4 eggs
  • 1 1/2 teaspoons almond extract
  • 1 teaspoon grated lemon peel (zest)
  • 1 teaspoon rum extract
  • 2 tablespoons cherry liqueur or maraschino cherry juice
  • 1 1/2 cups slivered almonds
  • 1 cup chopped candied cherries
  • 1 cup chopped candied lemon peel
  • 1 cup chopped candied orange peel
  • 1 cup chopped candied pineapple
  • 1 cup golden raisins
  • 2 cups sifted confectioners’ sugar of dusting

Directions:

In a large mixing bowl, combine 3 cups flour, 1 cup sugar, yeast and salt.
