Paradise and Pennant Candied Fruit

Ginger Banana Muffins

A little bit healthy, a little bit not, and perfect with a cup of coffee or tea.

Ingredients:

  • 2 cups whole wheat flour
  • ½ cup vanilla protein powder
  • ½ tsp kosher salt
  • 1 tsp cinnamon
  • ½ tsp ground ginger
  • ¼ tsp ground nutmeg
  • ⅛ tsp ground clove
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 3 very ripe bananas, mashed (~1 ½ cups)
  • ⅓ cup coconut oil, melted
  • ¼ cup brown sugar
  • ¼ cup granulated sugar
  • 3 large eggs, room temperature
  • ½ cup unsweetened apple sauce
  • 1 tsp vanilla extract
  • 3 tbsp Paradise Crystallized Ginger
  • ½ cup pecans, chopped
  • 1 tbsp chia seeds
  • Old fashioned oats for garnish
  • 18-20 pecan halves

Directions:

Preheat oven to 375°F.
