Lemon Blackberry Cupcakes

These cupcakes have are filled with tart lemon flavor that gets its kick from lemon zest and candied lemon peel. The rich blackberry icing perfectly balances the lemon, making each bite truly delicious. Perfect for every occasion, from casual get-togethers to special occasions.

Ingredients:

Cupcakes:

• 1 and 1/2 cups cake flour
• 1 cup granulated sugar
• 1 and 1/2 tsp baking powder
• 1/4 tsp. salt
• zest of 2 lemons
• 2 tsp. lemon juice
• 1/3 cup Paradise Lemon Peel
• 2 eggs
• 1/4 cup vegetable oil
• 2 tsp. vanilla extract
• 3/4 cup whipping cream

Blackberry sauce:

• 10-15 blackberries
• 1/4 cup water
• 2 tsp. granulated sugar

Directions:

Preheat oven to 350 degrees.
