Paradise and Pennant Candied Fruit

Lime Cookie Bars

Candied lime peel and lime zest bring a sweet yet tart taste to these wonderful bars, which is further enhanced by an assortment of white chocolate chips. The result is a wonderful “little bit of everything” treat which will surely be a hit at the next cookie exchange.

Ingredients:

Cookie dough:

• 1 cup (2 sticks) butter, softened
• 1 cup sugar
• 1 egg
• 3 cups flour
• 1 ½ tsp baking powder
• ¼ tsp salt
• 6 oz white chocolate chips
• 1/4 cup Candied Citron

Frosting:

• 2 tbsp heavy whipping cream
• 2 tbsp lime juice
• ½ tsp gelatin
• ½ cup (1 stick) butter, softened
• 2 cups powdered sugar
• 1/2 tsp matcha powder (for color)
• Pinch of lime zest
• Paradise Candied Citron

Directions:

1. Preheat oven to 375F.
