Paradise and Pennant Candied Fruit

Meyer Lemon Bundt Cake

Spoil your day with this light yet moist and easy-to-make dessert. This cake is rich, tender and bursting with sweet-tart quality lemon flavor. You can drizzle cake with glaze then sprinkle with additional candied lemon peel for more refreshing flavor.

Ingredients:

  • 2 cups milk
  • 1 cup sugar
  • 3 eggs
  • 1 cup canola oil
  • 1 1/2 teaspoons vanilla
  • 3 cups flour
  • 1/4 teaspoon salt
  • 2 1/2 teaspoons baking powder
  • juice and zest of 1 Meyer lemon
  • 1/2 cup diced Candied Lemon Peel

Glaze:

  • 1/4 cup Meyer lemon juice
  • 1/2 cup confectioners’ sugar

Directions:
Preheat oven to 350. Spray with baking spray or grease and flour one Bundt pan. Set aside.
