Paradise and Pennant Candied Fruit

Spiced PIneapple Cupcakes

These cupcakes center on the concentrated, chewy texture of candied pineapple. By using candied fruit instead of fresh, the batter stays light and fluffy while every bite delivers an intense, jammy burst of sweetness that doesn’t get lost in the sponge.

Ingredients:

For the Cupcakes: 

  • 1 box 13.25 oz yellow or white cake mix
  • 1/2 cup salted butter melted
  • 3 eggs
  • 1 cup whole milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon allspice optional
  • 8 oz. candied pineapple, chopped

For the Frosting:

    • 1 cup butter softened
    • 3 Tablespoons pineapple juice
    • 2 teaspoons vanilla extract
    • 4 cups powdered sugar
Directions:

    Preheat the oven to 350 degrees.
