Paradise and Pennant Candied Fruit

Tropical Pineapple Meltaways

Highlighting the delightful sweetness of candied fruit, Tropical Pineapple Meltaways offer an exceptionally sweet experience. These cookies derive their sugary goodness from both sugar and candied pineapple. To enhance their richness and decadence, I incorporated vanilla chips into the batter. Our enjoyment of these treats was undeniable!

Ingredients:

• 1 cup salted butter softened (2 sticks)
• 1 cup canola oil or avocado oil
• 1 cup granulated sugar
• 1 cup powdered sugar
• 2 large eggs
• 5 cups unbleached all-purpose flour
• 1 tsp. baking soda
• 1 tsp. cream of tartar
• 1 tsp. sea salt
• 1 tsp. pineapple extract
• 2 cups Paradise Tropical Pineapple Mix diced
• 12 oz. pkg. vanilla chips or premiere white baking chips
• 2/3 cup Turbinado sugar to roll the cookie dough in
