Paradise and Pennant Candied Fruit

Vegan High Protein Tropical Banana Muffins

How do you take banana muffins to the next level? Add Paradise Fruit Tropical Pineapple and make it vegan. These tasty muffins make a great treat or breakfast item, and the fact that they are healthy is an added bonus. Keep these on hand for when you have a sweet tooth but still want to be good.

Ingredients:

  • 2 ¼ cups whole wheat flour
  • ¼ cup vanilla protein powder
  • ½ tsp sea salt
  • ½ tsp cinnamon
  • 1 tsp ground ginger
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 1 ½ cups very ripe bananas, mashed
  • ⅓ cup coconut oil, melted
  • ½ cup unsweetened apple sauce
  • 1 tsp vanilla extract
  • 3 tbsp flaxseed meal
  • 9 tbsp water
  • ¼ cup brown sugar
  • ¼ cup granulated sugar
  • ¼ cup Paradise Fruit Tropical Pineapple finely chopped
  • 1 tbsp chia seeds
  • Sweetened coconut flakes for garnish
  • Paradise Fruit Candied Red Cherries for garnish

Directions:

In a small bowl, whisk together the flaxseed meal and water until well combined.
